Black Bean Burgers

These are so tasty! I love black bean burgers but often feel guilty when buying the store bought ones. So I opt for these simple homemade burgers that leave out the long list of ingredients. This recipe originated from the cookbook, Evolving Your Favorite Classics by Jenn Dubey (also for sale at SOF). 

Ingredients

  • 1 lb dry black beans (soak them overnight in 6-8 cups of water, then cook in 6 cups of water, bring to a boil, then simmer for 1-2 hours until beans are tender)

  • 1-2 cups oats

  • 2 whisked eggs

  • Chopped onions, peppers, whatever else you’d like

  • 1 tbsp cumin

  • 1 tbsp chili powder

  • 1 tsp of garlic powder

Directions

  1. Mash the cooked beans with a potato masher or forks.

  2. Add in veggies.

  3. Add oats, eggs, and spices.

  4. You may have to add more or less oats/veggies based on consistency.

  5. Make into patties and put on George Forman grill.

  6. It can be rather messy.

  7. Freeze if needed.
