Egg Muffins

Egg muffins are a great grab and go item. They are simple enough to make but easy enough when you have to eat breakfast on-the-go and are limited on time. You can take this base and change as needed or add as needed.

I love having two of these muffins with avocado and some hot sauce. They taste good warm or cold!

Ingredients :
  • Veggies: peppers, broccoli, mushrooms, onions, spinach, garlic, etc
  • 12 eggs, whisked and spiced with whatever you like (salt, pepper, cayenne)
  • 1 lb of Cooked meat: venison, bacon, turkey, andouille, chorizo,etc.
Directions:
  • Sautee veggies and garlic in some oil in a pan over medium heat.
  • Spray a muffin tin or use cupcake liners.IMG_4835
  • Add cooked veggies in bottom of each muffin spot.
  • Add the cooked meat over the veggies.
  • Pour whisked eggs into each muffin spot.
  • Put in the oven at 350 degrees for 20-25 minutes, until egg is baked through
