Paleo, Grain-Free, Amazing Banana Bread

I love bananas. I feel like I have stock in them. There are always some in the fruit basket and some in the freezer at my apartment. image (12)Bananas are so versatile too; they add into a lot of recipes for great texture and flavor.
Bananas also will cut out any nasty flavor in a smoothie, or at least do a good job to mask it. I really can’t stand drinking green food powder. It is very hard for me to chug it down. But if I have some frozen berries, a 1/4 of a frozen banana, cod liver oil, protein and water..can’t taste the green food powder. Mmm.
I also love bread-like foods. So therefore, I LOVE banana bread! I feel like I have found and perfected a recipe for banana bread that’s paleo, grain-free, and tastes amazing.

INGREDIENTS:
-4 ripe bananas
-4 eggs
-1/2 cup nut butter (I used peanut butter but use a different nut if you want it to be completely paleo)
-1/4 cup of melted coconut oil
-1/2 cup of coconut flour
-1 tbsp cinnamon
– 1 tsp baking soda
-1 tsp baking powder
– 1 tsp vanilla
-pinch of salt
*Some additional add-ins that could make this banana bread EVEN better*
-dark chocolate chips (duh)
-dried cranberries
-pureed pumpkin
-blueberries

INSTRUCTIONS:
    1.  Preheat oven to 350 degrees
    2.  Mash bananas in a large bowl with a potato masher. Then add in eggs, nut butter, and coconut oil.
    3.  Using a hand-mixer, blend together.
    4.  Add in coconut flour, cinnamon, baking soda, baking powder, vanilla, and salt. Mix well.
    5. Grease/Spray a 9×5 loaf pan. Pour batter in, spread evenly, place in oven!
    6. If using a metal pan it will take about 35-40 minutes to bake. If using a glass loaf pan it will take around 55-60 minutes.
    7. Check with toothpick to make sure it comes out clean.
    8. Put on cooling rack.
    9. Enjoy this deliciousness.
I like to keep mine in the fridge because I really like it cold. It also tastes great warm. Whatever your heart desires.
And remember, SAVE your ripe bananas. Don’t ever let them get too bad that you must throw them away. Then you wouldn’t be able to have this AMAZING banana bread!
