Sweet Potato Quiche and a Sunday Swole Sesh

Having a difficult time getting meal prep and exercise done all in the same day? Try my new sweet potato quiche and exercise recipe, it’s both quick and efficient. As long as you have some motivation  and eggs in the fridge, I’ve got you covered! You can have dinner and your workout done in less than an hour.

 Step 1

Set oven temperature to 400 degrees.

To make the crust, thinly slice a sweet potato and layer it in a glass pie pan. Drizzle with olive oil and salt and pepper and pop it in the oven for 20 minutes.

Step 3
Begin chopping whatever veggies/breakfast meats you would like in your quiche. I used broccoli, red pepper, spinach, onion, and garlic.
Step 4
Crack 6-8 eggs (depending on size) in a large bowl and add 1/3 cup of milk and your chopped ingredients. From here you can add whatever seasonings you like; I used salt, pepper, onion powder, and garlic salt.
Step 5
With whatever time is left for the sweet potato crust get warmed-up for your workout!

Step 6
Set the oven temperature to 375, then take the crust out of the oven and pour in your egg mixture. Put it back in the oven and set the timer for 30 minutes.

Sprinkle some feta on top of the quiche and put it back in the oven for another 5 minutes.

Complete these 8 steps and before you know it dinner will be ready and your workout will be done! Have fun with it and get your exercise and eat your eggs!
